  • Fresh coriander leaves, chopped for garnish
  • Fried onions for garnish (optional)
  • Saffron strands soaked in warm milk for garnish (optional)

Instructions:

  1. Prepare Rice:
    • Heat the water in a big pot until it boils. Add the bay leaf, cloves, cardamom pods, cinnamon stick, and salt after the rice has been soaked and drained.
    • Cook the rice for 70–80% of the way done. After draining, place everything aside.
  2. Prepare Vegetables:
    • Heat up some oil or ghee in a big pan. Once added, sauté the onions until they turn golden brown.
    • Add the sliced green chile and the ginger-garlic paste. For one minute, sauté.
    • Cook the diced tomatoes until they become mushy and tender.
    • Add salt, turmeric powder, red chili powder, and biryani masala. For a few minutes, cook the seasonings.Stir in biryani masala, turmeric powder, red chili powder, and salt. Cook the spices for a couple of minutes.
    • Add the yogurt and mixed vegetables. Stir thoroughly, then simmer until the veggies are soft but not cooked through.
  3. Layering:
    • Spread a layer of half-cooked rice into a biryani pot or other heavy-bottomed pot.
    • Add a layer of cooked vegetable mixture on top of it.
    • Layers should be repeated until all of the rice and veggie combination has been used.
    • Add sautéed onions, chopped coriander leaves, and milk flavored with saffron as garnish.
  4. Dum Cooking:
