In Hindu culture, Sabu dana Khichdi, a well-known Indian dish made with soaked tapioca pearls (sago), is usually eaten during fasting periods. It’s tasty, nourishing, and simple to make. The following is a basic recipe for Sabu dana Khichdi:
Ingredients:
- 1 cup Sabu dana (tapioca pearls)
- 2 medium-sized potatoes, peeled and cubed
- 2-3 green chilies, finely chopped (adjust according to taste)
- 1/2 cup roasted peanuts, coarsely crushed
- 2 tablespoons ghee (clarified butter) or oil
- 1 teaspoon cumin seeds
- 1 teaspoon grated ginger
- 8-10 curry leaves
- 1/2 teaspoon sugar (optional)
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
1.Wash and Soak Sabu dana:
- After the Sabu dana has been rinsed, run some clear water over it.
- Next, submerge the Sabu dana in water until it is submerged, about 1 inch. Soak it for four to five hours, or better yet, overnight. The Sabu dana need to have some texture even though it is soft. A sieve can be used to remove any extra water.
2.Roast Peanuts:
- In a skillet, dry roast the peanuts until they become crunchy and golden brown. After letting them cool, roughly ground them with a grinder or a mortar and pestle. Put aside.
3.Prepare Potatoes:
- Cut the potatoes into little cubes after peeling them. They can be cooked immediately in the khichdi or boiled till soft.
4.Cooking:
- In a big pan or kadhai, heat the oil or ghee over medium heat.
- Sprinkle in the cumin seeds and watch them pop.
- Add the curry leaves, grated ginger, and chopped green chilies. Sauté until aromatic, about 1 minute.
- When the potatoes are cooked through and beginning to turn golden, add the cubed potatoes and sauté.
- The soaked and drained Sabu dana should now be added to the pan. Toss to mix thoroughly with the potatoes.
- Cook, stirring regularly, until the Sabu dana becomes soft and transparent, about 5 to 7 minutes.
- Add the sugar (if using), salt, and crushed peanuts. Stir everything together and continue cooking for for 2 to 3 minutes.
5.Serve:
- Sprinkle some freshly cut coriander leaves over the Sabu dana Khichdi.
- Serve the khichdi hot, with lemon wedges available for squeezing over it.
Tips:
- You can vary the amount of green chilies to suit your level of spiciness.
- Take care not to soak the Sabu dana too much or it will get mushy.
- For extra taste, you can also add grated coconut, chopped cilantro, or a splash of lemon juice.
- Sabu dana Khichdi can be enjoyed as a light breakfast or snack, or as a satisfying and nourishing meal during fasting periods.
