Peas Pulao Recipe (Matar Pulao)

Introduction:

Peas Pulao, also known as Matar Pulao, is a simple yet flavorful Indian rice dish made with basmati rice, green peas, and aromatic spices. This light and fragrant dish pairs perfectly with raita, dal, or any curry, making it an ideal choice for a quick lunch or dinner.

Ingredients:

  • 1 cup basmati rice (soaked for 20 minutes)
  • ¾ cup green peas (fresh or frozen)
  • 2 tablespoons ghee or oil
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 2-3 cloves
  • 2-3 green cardamoms
  • 1 teaspoon cumin seeds
  • 1 medium onion (thinly sliced)
  • 1 teaspoon ginger-garlic paste
  • 1-2 green chilies (slit)
  • 2 cups water (adjust as needed)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon garam masala (optional)
  • Fresh coriander leaves for garnish

Optional Add-Ins:

  • 8-10 cashews (lightly fried in ghee)

  • 1 tablespoon raisins (for a mild sweetness)

  • A pinch of saffron soaked in 1 tablespoon warm milk (for a royal touch)

Instructions:

  1. Prepare the Rice:
    • Rinse the basmati rice under running water until the water runs clear.
    • Soak the rice in water for 20 minutes, then drain and set aside.
  2. Sauté Spices:
    • Heat ghee or oil in a pan or pressure cooker on medium heat.
    • Add bay leaf, cinnamon, cloves, cardamoms, and cumin seeds. Sauté until fragrant.
  3. Cook Onions & Aromatics:
    • Add the sliced onions and sauté until golden brown.
    • Stir in ginger-garlic paste and green chilies. Sauté for 30 seconds.
  4. Add Peas & Rice:
    • Add the green peas and sauté for a minute.
    • Add the soaked and drained rice, mix gently, and fry for 1-2 minutes.
  5. Cook the Pulao:
    • Pour in 2 cups of water and add salt. Stir well.
    • Cover and cook on a low flame until the rice absorbs all the water (around 10-12 minutes).
    • If using a pressure cooker, cook for 1 whistle on medium heat and let the pressure release naturally.
  6. Final Touch:
    • Fluff the rice with a fork and sprinkle garam masala (if using).
    • Garnish with fresh coriander leaves.

  • Serve hot with boondi raita, cucumber raita, or yogurt for a refreshing side.

  • Pair with dal tadka, paneer butter masala, or chicken curry for a complete meal.
